RECIPES:
Tomato-Mango Salsa with Tequila CAZADORES®
Tomato-Mango Salsa:
1 firm, ripe mango, peeled, pitted, and diced (1/3 inch)
3 Tbsp. Tequila CAZADORES® Reposado
2 tsp. sugar, to taste (depending on sweetness of mango)
1 lb. tomatoes, cored
1/2 c. finely chopped red onion
1 Tbsp. fresh lime juice
2 tsp. minced habanero chile
(1/2 Chile), including seeds
1 1/8 tsp. fine salt
2 Tbsp. chopped cilantro
Toss together mango, Tequila CAZADORES® Reposado and sugar in a bowl and let macerate for 1 hour. Preheat a toaster oven to 450 degrees F. Place the tomatoes, cored side up, on a small baking pan and bake until charred and softened to the core, 20 to 25 minutes. Peel the tomatoes and chop coarsely, retaining the seeds and juices. Stir onion, lime juice, habanero and salt with tomatoes, and taste to be sure that the salt level is just right. Stir in mango mixture and cilantro just before serving. Serve with tortilla chips or vegetable crudites.
CAZADORES® Mistletoe Margarita
1 1/2 parts Tequila CAZADORES® Reposado
2 parts pomegranate juice
1/2 part sour mix
1/2 part triple sec
1/2 part grenadine
Splash of fresh lime juice
Shake ingredients with ice and pour into a rocks glass. Garnish with a slice of lime.
Guacamole with Apples and Tequila CAZADORES®
Tequila-Infused Apples:
1 large crisp, sweet apple, peeled, cored and diced (1/3 inch)
1 Tbsp. Tequila CAZADORES® Blanco
1 Tbsp. fresh lime juice
Toasted Pecans:
1/4 c. pecan halves, sliced crosswise, or coarsely chopped
1 tsp. butter
1/8 tsp. fine salt
Guacamole:
1 serrano chile, stem discarded and coarsely chopped
1 1/2 Tbsp. chopped white onion
1/2 tsp. fine salt
3 Tbsp. chopped cilantro
2 Mexican Hass avocados,
halved and pitted
1 Tbsp. chopped cilantro, for garnish
Toss apples with Tequila CAZADORES® Blanco and lime juice, and let stand 30 minutes to 1 hour.
Spread pecans in a baking pan and bake at 350°F until golden and fragrant, 7 to 8 minutes. Add butter to pan and toss to melt and coat pecans. Sprinkle with salt.
Mash together chile, white onion, salt, and 2 tablespoons cilantro in a molcajete, or mince and mash with a large knife on a cutting board to obtain a paste. Cut avocado flesh in shells in a crosshatch pattern without going through skin, scoop out with a spoon and stir into chile, cilantro mixture, mashing avocado slightly.
CAZADORES® Cilantro Margarita
2 parts Tequila CAZADORES®
Reposado
8 cilantro leaves
2 parts sour mix
1/2 part simple syrup
Shake ingredients with ice
and pour into a rocks glass.
Finish the dish by stirring in the apple mixture, and most of the pecans. Garnish with remaining pecans and cilantro.
Skirt Steak a la Mexicana-Tequila CAZADORES® Blanco Sauce (Serves 4)
Skirt Steak:
2 lbs. skirt steak, cut into 4 pieces
2 tsp. coarse salt (or 1 tsp fine salt)
1 small lime, halved
1 Tbsp. olive oil
Sauce:
1/4 c. Tequila CAZADORES® Blanco
1 lb. tomatoes (3 medium), seeded and coarsely chopped (2 c.), or 1-1/2 c. canned or packaged chopped tomatoes, including juice
1/2 c. finely chopped onions
3 tsp. chopped Mexican pickled jalapeno chilies, including 2 tsp. juice from can*
1 lime, halved
1/4 c. chopped cilantro
Spiced Glazed Carrots:
1 lb. large carrots, peeled and cut into thin rounds
1 tsp. sugar
1/4 tsp. chipotle chile powder
1/4 tsp. fine salt
1 tsp. cider vinegar
1 Tbsp. olive oil
Pat steaks dry and season liberally with salt. Squeeze lime halves over both sides of steak and let stand 5 to 10 minutes. Heat a large skillet over medium-high heat. Add olive oil and sear steaks in two batches, turning once until well browned, 2-1/2 to 3-1/2 minutes per side for medium-rare. Transfer steaks to a plate and keep warm.
Very carefully, add Tequila CAZADORES® Blanco to the skillet and stir, scraping up the brown bits. Carefully heat and boil until most of the tequila evaporates, about 1 minute. Add tomatoes, onions, and chilies and saute, stirring and tossing, until tomatoes start to breakdown about 3-5 minutes. Squeeze lime juice into the sauce and season with salt. Spoon sauce over steaks and serve.
For the carrots preheat oven to 450 degrees F. Toss carrots with all other ingredients and spread in a shallow baking pan. Bake until carrots are tender, stirring once or twice, 10 to 15 minutes.
CAZADORES® Reposado Completo
Serve Tequila CAZADORES® Reposado accompanied by traditional Mexican Sangrita.
1 part Tequila CAZADORES® Reposado
1 part tomato juice
1/2 part orange juice
1/2 part lime juice
3 dashes of hot sauce
Pour Tequila CAZADORES® Reposado into a glass.
Shake remaining ingredients with ice and strain into a separate glass. Serve side by side.
Mexican Brownies with Tequila CAZADORES® Whipped Cream
Brownies:
1/2 c. flour
3/4 tsp. baking powder
2 tsp. ground Mexican cinnamon
1/2 tsp. salt
10 1/2 oz. butter (1 stick plus 5 tablespoons)
13 oz. bittersweet chocolate (65% to 70%)
4 large eggs
1 c. sugar
2 tsp. instant espresso powder, dissolved in 1 Tbsp. hot water
2 tsp. Tequila CAZADORES® Reposado,
plus more to sprinkle (1/4 c.)
1 c. pecans, roasted and coarsely chopped
6 oz. bittersweet chocolate, chopped
Whipped Cream:
Makes 1 1/2 cups
5 oz. Mexican chocolate, chopped
2 Tbsp. milk
1/4 tsp. salt
1 c. heavy whipping cream
Preheat the oven to 325 degrees F and butter a 13-by-9-by-2-inch baking pan, then line with buttered parchment paper. Mix flour, baking powder, cinnamon and salt in a bowl. Melt the butter and 13 oz. of chocolate together, and set aside to cool slightly. Whisk eggs and sugar with the espresso powder mixture. Stir in the melted chocolate and butter. Stir in the flour mixture and tequila. Stir in the nuts and the remaining 6 oz. chopped chocolate. Pour mixture into the lined, buttered pan and bake for about 40 to 50 minutes, until a tester comes out with some crumbs adhering. (Turn the pan after about 20 minutes to bake evenly.) The brownies should be moist but not batter like. Cool brownies and cut into squares. Sprinkle generously with more Tequila CAZADORES® Reposado and serve at room temperature.
In a non-reactive sauce pan, melt the chocolate with the milk and add the salt, stirring constantly for approximately 8 to 10 minutes or until it is smooth. When the mixture has cooled to 80 degrees F, start whipping the cream in separate, chilled bowl. Pour the chocolate mixture into a large bowl and fold in the whipped cream.
CAZADORES® Chocolate Torito (Serves 6)
Cocktail:
2 c. rice milk or regular milk
3 disks Mexican chocolate
1/2 c. smooth peanut butter
1 c. Tequila CAZADORES® Reposado
1 Tbsp. fresh lime juice
6 (8 oz.) glasses, filled with ice
Garnishes: 1/4 c. heavy cream
2 tsp. ground cinnamon
Bring the milk and Mexican chocolate to a simmer, mashing and stirring the chocolate until it is melted and the sugar crystals are completely dissolved (be careful not to boil over). Whisk the peanut butter until combined, then pour through a fine mesh sieve into a heat-proof container and chill until cold. Stir in the Tequila CAZADORES® Reposado and lime juice. Pour into glasses filled with ice, and garnish (if desired).
Drizzle each cocktail with approximately 2 tsp. of heavy cream, and top with a sprinkle of ground cinnamon.
