any idea or comment on how the use of the gueridon as an aid to making sales?

Hi Zhaf, I see it as follows; being with the trolley at the table to fillet, flambe etc makes an excellent opportunity for contact with the guest and talk about wines, deserts, cheeses etc. So I think not the gueridon itself but the presence with the guest opens the door for extra sales.
